Mint Gelato – Hot Process

3000g           105.8 oz      whole milk

150g               5.3 oz          heavy cream

60g                 2.1 oz          PreGel Piucremoso (Cream Base Texturizer)

540g              19.0 oz        sugar

60g                 2.1 oz          PreGel Dextrose

150g               5.3 oz          PreGel Nonfat Dry Milk (Grade A, Low Heat)

150g               5.3 oz          PreGel Diamant (Milk Base – Hot process)

140g               4.9 oz          PreGel Mint – White Traditional Paste

Method of Preperation

1. Combine all ingredient into large mixing bucket.

2. Mix well for 2-3 minutes.

3. Place in Hot Process machine and the follow the machine instructions.
