Caramel Mac Recipe


3390g (119.6oz) whole milk

339g (12.0oz) heavy cream

576g (20.3oz) sugar

101g (3.6oz) PreGel Dextrose

101g (3.6oz) PreGel Nonfat Dry Milk (Grade A, Low Heat)

170g (6.0oz) PreGel Diament 50 (Milk Base – Hot Process)

114g (4.0oz) PreGel Coffee Costa D’ Oro

45g (1.6oz) Caramel Traditional Paste

Coffee beans


1. Combine the first eight ingredients in a large plastic bucket.

2. Mix well for 2-3 minutes using an immersion blender.

3. Place in a Hot Process machine and process according to machine’s instructions, or heat on stove top 85*C/185*F

4. Process in a batch freezer according to the manufacturer’s instructions.

5. Garnish the top of the pan with caramel cubes and espresso beans.
