Chocolate Liquid Nitrogen Gelato
You can use liquid nitrogen to make gelato pretty much instantly. This makes a nice cryogenics or phase change demonstration. It’s also just plain fun.
Chocolate Liquid Nitrogen GelatoIngredients:
3000g (105.8oz) whole milk
150g (5.3oz) cream
540g (19.0?z) sugar
60g (2.1oz) PreGel Dextrose
300g (10.6oz) PreGel Totalbase (Water & Milk Base – Cold Press)
400g (14.1oz) PreGel Prontociocc Traditional Paste (Chocolate)
Directions:
1. Combine all ingredients in a large bucket.
2. Mix well for 2-3 minutes using an immersion blender.
3. If making dots style frozen product, place the gelato mixture into a squeeze bottle or syringe tube before dripping into a bath of liquid nitrogen to create frozen pearls.
4. If freezing the gelato using liquid nitrogen in a standard counter top mixture with a paddle, simply place the amount of base into the mixture bowl that is desired and pour in liquid nitrogen in stages on low speed until the product is frozen.
