Chocolate Liquid Nitrogen Gelato
You can use liquid nitrogen to make gelato pretty much instantly. This makes a nice cryogenics or phase change demonstration. It’s also just plain fun.Chocolate Liquid Nitrogen Gelato
3000g (105.8oz) whole milk
150g (5.3oz) cream
540g (19.0?z) sugar
60g (2.1oz) PreGel Dextrose
300g (10.6oz) PreGel Totalbase (Water & Milk Base – Cold Press)
400g (14.1oz) PreGel Prontociocc Traditional Paste (Chocolate)
1. Combine all ingredients in a large bucket.
2. Mix well for 2-3 minutes using an immersion blender.
3. If making dots style frozen product, place the gelato mixture into a squeeze bottle or syringe tube before dripping into a bath of liquid nitrogen to create frozen pearls.
4. If freezing the gelato using liquid nitrogen in a standard counter top mixture with a paddle, simply place the amount of base into the mixture bowl that is desired and pour in liquid nitrogen in stages on low speed until the product is frozen.
