Halloween Gelato Cupcakes


Ingredients

3000g (105.8oz) whole milk
125g (4.4oz) cream
420g (14.8oz) milk couverture, 38.2%
280g (9.9oz) sugar
200g (7.1oz) malted milk powder
45g (1.6oz) egg yolks
400g (14.0oz) assorted candy bars, chopped 

Directions

1. Combine all ingredients except candy bars in a large bucket.
2. Mix well for 2-3 minutes using an immersion blender.
3. Place in hot process machine and process according to manufacture's instructions.
4. Upon extracting, fold in fold in the candy bars.
