Lemon Mint Lemon Mint Gelato Pop

Ingredients:

517g     (18.2 oz)                 PreGel Base Allegra (Alcoholic Base – Hot/Cold)

460g     (16.2 oz)                 sugar

80g       (2.8 oz)                  PreGel Nonfat Dry Milk (Grade A, Low Heat)

3162g  (111.5 oz)                whole milk

345g     (12.2 oz)                heavy cream

287g     (10.1 oz)                bourbon

169g      (6.0 oz)                 PreGel Mint – White Traditional Paste

10g        (0.4 oz)                 fresh mint leaves

1 each                                lemon zest

Instructions:

1. Combine all the ingredients in a large bucket.

2. Mix well for 2-3 minutes using an immersion blender.

3. Allow to age for 30 minutes or overnight.

4. Place in a batch freezer and process according to the manufacturer’s instructions.
