Smoked Turkey with Coffee Glaze

 

Step it up this year coffee lovers. All you need is a grill with a lid and alder wood chips. You'll be looking at about 3 hours to thoroughly smoke the turkey. Our recipe calls for an 11-12 pound bird. Before smoking the turkey follow these instructions below. Happy Thanksgiving!

Ingredients

1 full size pan

1 cup apple cider vinegar 

1/2 cup Bristot or Danesi espresso

1 full size onion

12 large fresh thyme sprigs

2 tsp salt and pepper

2 1/2 cups brown sugar

2 cups water

Directions

Step 1:

Make the coffee glaze; In a large stockpot, add all ingredients above and bring to a boil. Increase boiling to make glaze a thicker consistency. Let glaze come to room temperature and prepare to baste.

Step 2:

Baste turkey and begin roasting, basting every 30 minutes. Continue smoking, basting every 15 minutes until bird reaches 165° F with thermometer inserted into the thickest part of the turkey.
